Discovering Balsamic Vinegar of Modena!
The experience takes place at Acetaia Malagoli Daniele. Daniele is Sofia's dad and at th age of 22 she decided to turn his hobby for Traditional Balsamic Vinegar of Modena into a business. The house is based in the emilian countryside, in the between of Modena and Bologna. What to expect? Well, first of all a warm welcome, but also a professional explanation - surrounded by ancient barrels - on the black gold of Modena. The Malagolis are always glad to welcome tourists at their family’s Acetaia and to share their knowledge and passion with them. This is an educational experience where you'll learn a lot about the traditions of Modena, but especially on authentic products and how to recognize them. You'll learn the differences between the IGP Balsamic Vinegar of Modena and the DOP Traditional Balsamic Vinegar of Modena. They sound similar, they both are good products, but they are at the same time, different products, born for different reasons and it means that they should be also used differently. Moreover, you'll understand how to recognize them on the market.

At the arrival I will offer you breakfast, and I will give you a lab coat and a cap for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. We are going to meet by the Forestarìa farm on the northen hills of Lucca. We will start the cooking class with a glass of local wine :-) In the kitchen of our farmhouse, we will cook together authentic&traditional tuscan recepies. Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this Masterpiece of Italian culinary tradition. On Request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price Other things to note The aging process requires cold temperatures in winter and hot in summer so be prepared with the appropriate equipment. My guests will enjoy one of the best views of the hillside in Cinque Terre, enjoy local specialties and listen to my Bach played live on the piano. The focus of this year, 2022, will be J. S. Bach's Goldberg Variations and Six Partitas. I will welcome my guests into my property, inside the Cinque Terre National Park, where they will visit a young vineyard, learn about the building techniques of the old dry stone walls that are peculiar to this area and hear some historical background of what makes our area so unique. Afterwards, they will enjoy a full dinner, a selection of wines and my homemade lemon liqueurs while enjoying classical piano music played live. I will only be able to transport a maximum of 6 guests per session in my vehicle but will help organise transportation for any extra guests who may be interested. The whole event will take place outdoors, on my terrace above the vines. If the weather does not allow for an enjoyable outdoor setting the event will be cancelled and our guests entirely reimbursed. Our adventure begins at morning in Piazza della Calza in Florence at Bar d'angolo. We'll drive to our 12th-generation winery, Wich is not open to the public, in the gorgeous wine country of Chianti Classico DOCG Denomination of Controlled and Guaranteed Origin. Explore the farm with ours kinds pets like truffle dogs, cat, chickens and pig (prosciuttina) and winery whit the owner winemaker and learn about the history of this 12th-century artisanal winery. We will take you with the sidecar to know our Florence, not the usual one in Piazza Signoria, Uffizi, etc ... No, the one where we grew up and that we still attend today; the one of the workshops of artisans and small keepers of Florentine enogastronomic traditions. The sidecar is the perfect way to move in the old narrow streets of the heart of the city, to visit the Oltrarno, perhaps the only area still populated by the Florentines and their traditions. But we will also take you out of the city to the surrounding hills that have made Florence as famous as its museums and works of art. The stages we choose together, depending on time, day of the week and especially according to your tastes! Other things to note We provide rain coat for passengers in case of (not too hard!) rain. Learn how to make homemade pasta easily and successfully. We will meet in Florence at our cooking school located in the historic center, easy to reach, 5 minutes from the Arno river. We are a team of professionals chefs, we are pleased to meet you and let you spend a nice time with us for a fun and unique lesson. We will teach the secrets how to make RAVIOLI, FETTUCCINE or SPAGHETTI & TORTELLI in different shape. We will provide you with the tools useful for the preparation: kitchen gown, rolling pin and pasta cutter, eggs and flour. After the preparation, we will show you all the steps necessary for the preparation of sauces such as "Pommarola" and "Ragù alla bolognese". At the end we will set the table and eat all together the pasta you have made, with 3 different sauces, like a real Italian family. We will be about 12 participants, the experience lasts about 3 hours, It will also be an opportunity to socialize with other travelers and with your host in an Italian atmosphere. During lunch will be served delicious organic Tuscan wine, that we produce on our farm called "Dalle Nostre Mani”, wines produced with natural methods. MY FARM three experiences in one day
Immerse yourself in the tuscan countryside with 3 different experience! We will meet in Florence, an authorized driver will take you to our farm just 35 minutes. What will we do? 1 - Walk among country fields, ancient olive trees and vineyards, enjoy the landscape, the plants, the explanation of our history, occasion to take photos in the suggestive setting.
Maybe you will meet our funny domesticated pig! In September taste the grapes! 2 - Visit cellar and tasting 5 organic tuscan wines: white & red, also aged directly from the barrel and "vin santo" a traditional sweet wine. Then you can taste olive oil, we will delight you with a short film about our mission. You have the opportunity to buy wines at cellar prices, or order them to ship. 3 The last part is dedicated to making fresh pasta with Luca or Ester, they teach the secrets to making pasta like Spaghetti or Ravioli! Of course we will eat them together in a long table as in an Italian family. During lunch will be served our wine. One of our co-host make sure that you can be the protagonist! We will be about 16 participants. Transport by van, with driver, from Florence is included. Attention: the return is by train to Florence, the most ecologic and comfortable way to avoid traffic.

Our journey around Bologna starts between Bologna centrale and one of the main gates Porta Galliera portal of the former outer medieval walls of the city of Bologna. Here we discover the dark past of post WW2 events and the joyful liberal future of Bologna, we’ll be marching through Via Indipendenza to the cutest secret of Bologna so-called Finestrella, and then we discover student quarters, the University of Bologna, Piazza Verdi and Jewish ghetto. Do you know what else is cool about Bologna? Porticos! And we are going to pass under so many of them. Later on, we discover the story of Le Tre Frecce and Sette chiese. What else? The two towers! Story, secret and superstition about them. The next stop is one of the well-preserved squares in Italy Piazza Maggiore, I’ll tell you about the Neptune statue, San Petronio, a prison that became a library and an interesting secret that I won't spoil here because you'll discover it with your ears. Hello Guys, thanks to this experience we are going to discover how the originals DOP Traditional Balsamic Vinegar of Modena & Parmigiano Reggiano cheese are made! An authentic opportunity to learn, also, how to recognize the original ones in the market! You’ll be introduced to the both by the producer who will be your personal tour guide! After the tour, you’ll taste the products to discover their typical flavor! Note: if you won’t have any car, no problem! We will support you arranging the transfer with a professional driver! IMPORTANT TO KNOW: The experience starts at the cheese factory and its address is Via Baracca 6/A, Castelfranco Emilia. When you arrive, enter and go to the end of the road!. Then, we will move to the Acetaia and its address is Via Celeste 9, Castelfranco Emilia. AGAIN, the best way to arrive is taking a train to Castelfranco Emilia. Dopo di che ci godremo una cena vegetariana ma molto tipica toscana e avremo l'opportunità di scambiare le nostre esperienze di vita e di viaggio. Wine Tasting - Tenuta Adamo
The experience consists of a tour of one of the cellars in the hills of Lucca. Guests will be shown the various environments of the cellar and explained the stages of wine preparation. Depending on the time they come they might also see some of the wine making processes. Afterwards, guests will be accommodated on the terrace where they can taste our wines and the olive oil (included in the cost of the experience :D) combined with typical products. I will sit at the table with them to explain the organoleptic characteristics of the various wines and answer any questions on the subject. Depending on the guests, the whole experience can last just under an hour or more generally over two hours. I will bring you to the typical and local food markets. We will go shopping in the best food shops of Bologna, where usually locals go. We will taste local salumi, local cheese and home-made pasta, and local wine of course! We will go also to a special ancient indoor market, where you can buy specialities of the town to bring home! I will suggest you what to but and how to cook it. We Will also have amazing gelato! You will enjoy the special atmosphere that makes the district so special, lively and energetic while learning more about things you can’t miss when visiting Bologna. Discovering Balsamic Vinegar of Modena!
The experience takes place at Acetaia Malagoli Daniele. Daniele is Sofia's dad and at th age of 22 she decided to turn his hobby for Traditional Balsamic Vinegar of Modena into a business. The house is based in the emilian countryside, in the between of Modena and Bologna. What to expect? Well, first of all a warm welcome, but also a professional explanation - surrounded by ancient barrels - on the black gold of Modena. The Malagolis are always glad to welcome tourists at their family’s Acetaia and to share their knowledge and passion with them. This is an educational experience where you'll learn a lot about the traditions of Modena, but especially on authentic products and how to recognize them. You'll learn the differences between the IGP Balsamic Vinegar of Modena and the DOP Traditional Balsamic Vinegar of Modena. They sound similar, they both are good products, but they are at the same time, different products, born for different reasons and it means that they should be also used differently. Moreover, you'll understand how to recognize them on the market.
