Co budeš dělat

Our quiet terrace in a hidden cul-de-sac, in the heart of Barranco, will be the setting for this experience. It's the place I live and work. It's more of a chocolate laboratory really :)
We'll meet and greet, have a cup of cocoa/cofee/tea before diving in head first:
First we'll investigate the raw cocoa beans and talk about what happens on the farm. Step by step we will transform these beans into your own hand-made bean-to-bar chocolate (which of course you get to take home). Next step is roasting. This is done in our vintage 2.5kg Antigiano roaster and takes about 30 mins. Then we crack-open the beans and release their flagrance; separate the husks and finely grind them for further processing.
Once we have our "liquor", we'll start the refining process which takes up to 24h. We'll have a batch running for you so you can also see this step, before we mold and chill...
In about 20 mins the bars are ready to be taken out and of course tasted... We usually have about 2-3 origins on stock so you get to really feel the difference between the different origins.
We round up packaging your own bar and share some pointers for Barranco so you know what to do while you walk-off your chocolate buzz ;)
Other things to note
Even though this aims to be a hands-on experience, you can choose the level of engagement. Anything between watching and getting finger-licking deep in the chocolate... You won't get dirty if you don't want to :)

As a Belgian in Peru it was just a matter of time before I got to produce Belgian chocolate with Peruvian beans. I took the slow road, starting as a barista, coffee roaster to finally admit that chocolate runs in my veins. I hunt down the best cacao growers in Peru and turn their produce into delicious bean-to-bar products. Since I'm more of an artisan than I am a factory I never stop experimenting and love sharing my passion. It's hard work bringing consciousness into the complete supply-chain and make sure that everything that touches your product is energetically correct. This experience is aimed to share my knowledge and unique isights into the world of cacao in a hands-on way. And of course, there will be sampling, lots of sampling... delicious freshly hand-made chocolate and cocoa in all forms and shapes...

Fantastic chocolate making session! very informative about the process and a lot of heart that goes into finding the right beans all the way to roasting and grinding. This will by far be the best chocolate you will taste!
